Christmas Weissbier Update
I checked the batch today, I am finally getting some action in the airlock. It took about 3 days for it to really kick off. There appears to be a nice layer of kaizen on top.

First Extract Beer
Completed my first Extract Beer on the weekend (See the recipe below).. All went well except for a few hick-ups. I wasn't able to put my extract in at the beginning on the boil as I did not have enough room due to a miss estimation of by boil pot. I also missed putting in my 500 grams of Dry Malt Extract to get my target OG. Its look like this will be another nice light summer beer, just like the last 2 batches i have done so far.
This was also the first time that I used BeerSmith and I have got to say that I am pretty happy with it. Its full of lots of features which I am still trying to understand but the may favorite feature is scale recipes and converting recipes from All-Gain to Extract. I am finding that the more I am looking into this, the less daunting All-Grain is becoming. I think that in 1 year I will be moving over to All-Grain,
